~~~~~~~~~~~~~~~J's DEER CHILLI ~~~~~~~~~~~~~~~~
I was Born in Cincinnati (Jewish Hosp.) I have live in Cincinnati all my live (well now I live on the out skirts if Cincinnat).
With that being said I know this is not a Cincinnati style chilli, but it is real good if I do say so myself.
Hey, I came up with the recipe in Cincinnati.
Deer meat is leaner than beef and you don't end up with the film of grease on top of you chilli. And man does it taste good!
Try it, enjoy and let me know how you like it.
God Bless
J’s Deer Chili
2 lbs ground deer
1 lb breakfast sausage
1 28oz can diced tomatoes (drained)
1 qt. jar spaghetti sauce (traditional-no meat or chunky veggies)
2 TBSP red pepper (ground)
½ cup sugar
½ large bell pepper (green or red) chopped
1 small onion chopped
2 12oz. cans Brook’s Chili Beans
In a large pot, combine deer and sausage. Add enough water to cover meat. Boil until meat is brown, breaking meat apart while cooking.
Once meat is brown, add remainder of ingredients.
Simmer over low to medium low heat until onions and peppers are cooked, stirring occasionally.
You can use beef instead of deer and if you want a Cincinnati zing add 1 and 1/2 Tea spoons of cinnamon.
